*Miso is a traditional food in Japan which has been sustaining the dietary life of the Japanese since ancient times. To watch how miso is made, this tour visits Shioya Jozo, a historical brewery established about 300 years ago as a salt merchant and began producing miso towards the end of the Edo period (1603-1868). 10 of the brewery’s buildings have been designated as some of Japan’s Registered Tangible Cultural Properties, and to this day, the brewery continues to make miso and soy sauce.
